This is a great recipe when company is staying over. It’s already prepared ahead of time, you just need to pop it in the oven. Can’t beat this one for a brunch, or potluck breakfast dish. Make sure you dice the ham finely, it makes for a better overall texture and blends with the other ingredients nicely. Truly delicious!

Ingredients:
4 cups seasoned croutons
2 cups cheddar cheese, grated
8 eggs
4 cups milk
1 teaspoon salt
Tabasco sauce, several “shakes”
1 – 4 oz. can green chile, finely chopped
1 – 1/2 cups cooked ham, chopped
Directions:
The night before, spray a 9″x13″ baking pan. Place the croutons in a single layer on the bottom, top with 1 cup of the cheese, then layer the ham, covering evenly.
In a mixing bowl, combine the eggs, milk, Tabasco sauce & salt. Wisk together until thoroughly mixed. Pour over the top of the layers.
Next, top with the green chile and finally the last cup of cheese. Cover and place in the refrigerator overnight.
The next morning, preheat the oven to 375 F, then bake about 40-50 minutes, or until the egg mixture is set.
Recipe Notes:
Instead of ham, try adding bacon, sausage, or veggies.
