I enjoy and appreciate yeast breads, but when time doesn’t permit, a nice quick bread is a great addition to a weekday meal. For years, we’ve been enjoying a quick sweet bread recipe called Dippity Do’s from Recipe Goldmine (if you’ve never checked out this site, it’s full of easy but delicious little gems).
Here’s my apple cinnamon version:
1/2 cup butter
1 cup apples, chopped
2-1/2 cups flour
1-1/2 cups sugar
3-1/2 teaspoons baking powder
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1-1/2 teaspoons salt
1 cup milk
1/4 cup brown sugar
Preheat oven to 450 degrees F. Place the butter in a casserole dish, or 9″x13″ baking pan. While the butter is melting, add the chopped apples. Toss to coat in the butter, and spread out in a single layer. Cook for about 10 minutes.
Combine the dry ingredients, mixing thoroughly. Pour in the milk, stir until just combined. This will make a thick batter.
Remove the casserole dish from the oven, and drop the batter by the teaspoonful over the butter and apples. Cover the entire surface, but do not spread the batter. Sprinkle the brown sugar over the top, covering evenly.
Bake for about 15 minutes, or until golden brown.
This is best served warm, right out of the oven. Bake this in the morning for a nice coffee cake, and try substituting blueberries, raspberries, blackberries, or peaches!
