I love this time of year, American football season brings an air of excitement of good things to come.  Having a son who plays High School football, we look forward to those Friday Night Lights…and the excitement in the air!  The boys work so hard all year long, keeping fit, lifting weights, eating right.  They have such discipline, commitment & drive.  We’re so proud of our son as well as all of his teammates.  They have admirable qualities & leadership characteristics that are something to behold both on and off the field.

Buttered O’s are a snack food that I’ve come to associate with football.  Whether you’re watching the game on TV or tailgating, this is a tasty addition to game food! Continue reading

I’ve been having so much fun with my Greek yogurt substitutions, that I thought I’d try my hand at inventing a cornbread casserole recipe.  I guess you’re never too old to play with your food!

The result of my “no oil” recipe, was a moist, dense cornbread,  This would not be a recipe I would make for company, but in watching my waste-line and trying to get some healthy substitutions incorporated into our daily eats, this definitely worked. Continue reading

Southwestern Quinoa you ask?  Sure, why not?!  Anaheim green chilies are really plentiful in Tucson this time of year, and you can usually purchase them by the box or burlap bag at many of the markets.  If you’re really fortunate, you’ll find a temporary roasting station set up outside, that will do the roasting for you, which will save a lot of time.  Many Tucsonans take advantage of this seasonal market (coming from New Mexico) to package and freeze the chilies for future use. My usual preparation of any type of vinaigrette salad, is to add the oil, vinegar & seasonings straight onto the salad.  I’ll call this my “toss and taste” method, and once again does not involve a recipe.  So adding ingredients to a bowl, I forced myself to measure & taste as I went, and I came up with this dressing recipe.  I don’t normally use yogurt, but as I mentioned in another post, I am trying to teach myself to cook with Greek yogurt as a healthier alternative.   Continue reading

Through much trial and error over the years, I’ve discovered that the secret to really tender, juicy ribs is to cook them low and slow. I bake mine in the oven, from late in the morning, and pretty much forget about them until dinner time.  The way I cook mine, you’ll need a large roasting pan with a good fitting lid.  This is a necessity, as this method involves hardly any liquid, but it forms a nice steam.  I’ve used all sorts of liquids, from juices to ale, but I find that good old fashioned water does the trick, with the majority of flavor coming from the sauce that gets added at the end.
