A wonderful, lightly dressed salad, delicious in it’s simplicity, & a unique use of cannelli beans, along with English cucumbers, grape tomatoes, & sweet onion. Two types of vinegar blended with seasonings, makes this a dish that’s sure to please!
Ingredients:
1/2 English cucumber, sliced in chunks lengthwise
1 cups grape tomatoes, sliced in half lengthwise
1 can cannelli beans, drained & rinsed
1/4 cup sweet onion, chopped
1 tablespoon olive oil
1 tablespoon red wine vinegar
1 teaspoon seasoned rice wine vinegar
1/2 teaspoon salt
fresh cracked pepper
1/2 teaspoon dried basil
1/2 teaspoon marjoram
2 cloves garlic, minced
1/4 cup of 3 cheese mixture (Asiago, Parmesan, Romano)
Directions:
Mix all ingredients, chill for about an hour, then taste & adjust seasonings.
Recipe Notes: This is a healthy salad, with very little oil added. You’ll find that the small amount of juice from the tomatoes & cucumbers, along with the vinegar & seasonings creates a wonderful dressing.
I like anything with cannel beans, and I’m sure this would be no exception.
