When it comes to meal time, I’m lucky enough to have a family that has a wide range of likes, & very few things they dislike. For this dinner, I wanted to use up some of the rescued produce I had on hand, including some gorgeous red, orange & yellow bell peppers. Now my husband isn’t crazy about bell peppers, but he’s a good sport. So I thought, everything is a series of compromises – he’s not big on bell peppers, but (if you’ve been following my blog for awhile, you already know) he’s a big fan of cheese! Give a little, take a little – and we’re both happy! Families with kids are usually trying to sneak in some healthy vegetables whenever possible, & this is a creative way to do just that, while still enjoying a “fun” family dinner!
As for me, I was quite content to eat the meat & veggie mixture, excluding the corn chips & cheese (see? win-win I tell you!) I’ve included small bites of potato, to bump this dish up to a hearty meal status, & not just an appetizer – although that would be great, too!
Ingredients:
1 – 1/2 lbs. ground beef, cooked & drained
3 bell peppers, chopped (1 of each color – red, orange, yellow)
3 Roma tomatoes, chopped
3 medium potatoes, peeled & chopped
1 onion, chopped
1/2 teaspoon garlic powder
1/2 teaspoon ground coriander
1/2 teaspoon ground mustard seed
1/2 teaspoon salt (or to taste)
pepper
nacho cheese sauce
corn tortilla chips
Directions: Heat a little oil in a large skillet, then add the potatoes & onion, cooking until browned & cooked through. Add the bell peppers, & continue to cook until they are crisp-tender. Mix in the fresh tomatoes, spices, & the cooked ground beef. Heat through, then taste & adjust seasonings as needed. Serve with warm nacho sauce & corn tortilla chips on the side.
Recipe Notes: This would be a good one to serve for your “big game” party! Gotta love football food! Garnish ideas would include sliced black olives, chopped green onions, & sour cream.

I am lucky my husband will eat mostly anything, too. I am extra lucky that he likes bell peppers (all colors) because I LOVE (LOVE, LOVE, LOVE, LOVE, LOVE, LOVE, LOVE) them! This sounds great. I think I will just use cheese instead of the cheese sauce.
