With Christmas being only a week from now, this is an easy way to make a quick batch of sugar cookies for sharing or to keep at home.

The bonus here, is that it’s super duper easy – no rolling pins or cookie cutters required! You’re sure to have all these ingredients already on hand, just make sure you have a good quality vanilla extract, as it’s added here in generous amounts for both the cookie dough & the icing. As it turns out, it’s just the perfect amount of vanilla. One of the things I loved about this recipe was that while it was sweet, it was not overly sweet.
I used the medium sized scoop as recommended, then rolled each by hand & baked on a silicon baking sheet. One recipe yielded a little over 3 dozen cookies.
