This week’s rescued produce included a bunch of yellow crooked neck squash, which I adore! I grew up having fresh squash sliced, cooked, topped with butter, & seasoned with only a little salt & pepper. To this day, I believe there is no better way to serve yellow squash. The mildness of this squash is only enhanced by simple preparation & seasoning. I love the tender little seeds with each mouthful. So delicious!
So, in keeping it simple & showcasing this lovely vegetable, I made this delicious squash & potato soup.
Ingredients:
I started with a medium-large soup pot of homemade chicken stock
3 potatoes, diced
1 onion, diced
5 – 6 small crooked neck squash, sliced into rounds
5 – 6 cloves of garlic, roughly chopped (mine were mild so I used more)
3 or so tablespoons fresh chives, snipped
salt & fresh cracked pepper
onion powder to taste (couple of teaspoons)
Directions:
Starting with homemade chicken stock, add the vegetables & garlic, simmer until the veggies are tender. Add the seasonings, adjusting as needed. Top with the fresh chives, & serve hot.
Recipe Notes:
This was really quick to put together, and even better the next day. This made a tasty lunch, as I just popped a mug full of soup in the microwave. Am I the only one who likes to eat soup from a mug?
