Thai Chicken Bites

Doesn’t everyone love appetizers?  They’re like a little party all by themselves!  This recipe was inspired by a recipe called Thai Chicken Skewers, from a fun appetizer cookbook I have, called Favorite Brand Name Appetizers.  I’ve made that recipe, and it’s really good.  Being me, I have my own idea of what things should taste like and I revamped it completely into something especially delicious!

Ingredients:

3 lbs. chicken breasts, cut into 1″ pieces

2/3 cup peanut butter

4 tablespoons lemon juice

3 tablespoons soy sauce

2 – 3 teaspoons garlic, minced

1 teaspoon cumin

1 teaspoon garam masala

3 tablespoons onion powder

1 -1/2 teaspoons sesame oil

sesame seeds, as a garnish

paprika, as a garnish

Directions:

Place the chicken in a large zip bag.   Mix the seasonings and peanut butter in a bowl until thoroughly combined, then pour over the chicken.  Marinate in the refrigerator overnight.

Place cooking racks inside a jellyroll pan, then spray with non-stick spray.  Place the chicken on the racks, and sprinkle them with sesame seeds & a little paprika.  Place the chicken under the broiler until cooked, but still juicy and tender.  Watch closely, depending on the size of the pieces, they’ll take about 20-25 minutes…but start checking about 10 minutes into the cooking, turn the pieces over if desired (but not necessary).  Serve hot out of the oven, or cold…. with toothpicks if made as an appetizer, but it’s also wonderful as the main dish.

Recipe Notes:

I had “the girls” over yesterday.  We love to have a meal out of appetizers, and we always put together a great assortment of goodies.  This was one of my contributions, for something a little different but enjoyed by all.
