Pork Carnitas

This is a good “go to” recipe when I’m busy with a project around the house, since there’s very little prep work.  It’s great to be about my work, but as I smell this cooking away, I smile, knowing that later in the day we’ll be rewarded with a delicious home cooked meal.


2 – 1/2 lbs. lean pork

1 – 14.5 oz can crushed tomatoes

1 green pepper, deseeded & diced

1 jalapeno, deseeded & diced

1 teaspoon salt

1 teaspoon cumin

1 teaspoon chili powder

1 teaspoon oregano

2 teaspoons garlic, minced

a handful of fresh cilantro leaves, roughly chopped

Place the pork in a roasting pan, cover with the tomatoes, then top with the seasonings.  Cover with the roaster lid, and place in a 250 F oven for about 3 hours or until tender.  Remove the meat onto a platter, and shred with a fork.  Add the shredded meat back into the seasoned juices, and stir.  Serve with flour tortillas, shredded cheese and sour cream.

Recipe Notes:

We like to make burritos, or fry them to make chimichangas.  Just make sure to use a slotted spoon and squeeze out some of the juices …no soggy burritos on my watch!
