Horseradish Mashed Potatoes

Last week we attended my nephew’s birthday party at The Mountain Oyster Club.  The steak dinner was outstanding, and my husband and I fell in love with the mashed potatoes, flavored with horseradish.  Such an amazing combination, yet such a simple idea!  My sister Jan made the comment that the horseradish flavor in the potatoes was reminiscent of turnips, and I agree with her.  Lucky for me, my sister Jill had recently taken me to Penzeys Spices,  and she purchased for me (among other things), horseradish powder! So tonight we had steak for Sunday dinner, and I came up with my own recipe.

Ingredients:

5 medium potatoes, peeled & cubed

3 tablespoons butter

1/2 cup milk

1 teaspoon salt

1/2 fresh cracked pepper

2 teaspoons horseradish powder

Directions:

Boil the potatoes for about 20 minutes, or until they’re tender, then drain.

While they’re still hot, place them in a medium sized heat safe bowl.  Using an electric mixer, add the butter, seasonings, and milk.  Mix until thoroughly combined, and the butter has melted.  Add additional milk, butter or seasonings as desired.  Garnish with paprika, chives, or parsley, and serve warm.

Recipe Notes:

My husband loves horseradish & commented that he would enjoy even more horseradish in this dish, I thought it was perfect!  Experiment and decide what you would prefer.
