Thank goodness it’s Friday!  It’s a full time job running a household.  Keeping the evil birds away from the windows…batting toys under large appliances… keeping Dad out of the computer chair…making sure all of my favorite places are still comfy.  This is a picture of me testing out Mom’s side of the bed.  Yup.  Still comfy.  Looks like Mom will be looking for another place to sleep tonight…

How do you make Egg Foo Young? Well, I’m not sure of the “proper” way to make it, I just know what I do.  This was one of those recipes that was born out of necessity.  Years ago when I worked outside of my home, I worked the swing shift.  I wanted to bring homemade food for “lunch” or in this case it was dinner.  If I felt organized, I’d prep things, then freeze them into individual dinners.  It sure made life easier for me, and in the long run it was a time saver, less expensive, and healthier, too.  Egg Foo Young was one of those “go to” meals for me, and I’d use whatever I had on hand.  Sometimes, for example, I’d use crooked neck yellow squash, sliced up in place of the bean sprouts.  I’d pack a little scoopful of seasoned rice on the side, and I was ready to go! Finnish Sweet Cardamom Raisin (Cranberry) Bread – A Recipe Review

I’ve been looking for a really good Cardamom Bread recipe, and I’m so fortunate to have found the perfect one over at Epicurious, with Finnish Sweet Cardamom Raisin Bread.  The ingredients were just what I was hoping for; not too much sugar, a healthy but not overwhelming amount of Cardamom, and a light egg yolk wash for the perfect finish (no pun intended).

Do you remember back in the 90’s when it was sort of a thing to make a quick enchilada casserole out of corn tortilla chips? (Did I just say that out loud?  Yikes! I’m showing my age!)  Anyway, I needed a quick dinner last night and threw this one together. Easy peasy. It’s so easy, I’m almost embarrassed posting it here. Green Chile & Ham Overnight Bake

This is a great recipe when company is staying over.  It’s already prepared ahead of time, you just need to pop it in the oven.  Can’t beat this one for a brunch, or potluck breakfast dish.  Make sure you dice the ham finely, it makes for a better overall texture and blends with the other ingredients nicely.  Truly delicious!
