Ingredients:
2 medium apples, peeled and diced
1 – 1/3 cups flour
2 teaspoons baking powder
1/4 teaspoon salt
1 – 1/2 tablespoon sugar
1/4 teaspoon cinnamon
1/2 teaspoon vanilla
1 egg
2/3 cup milk
oil for frying
powdered sugar
Directions:
Mix the dry ingredients, then add the milk and egg. Mix in the chopped apples.
Drop the batter by teaspoonfuls into the hot oil. Cook until browned and cooked through. Place the cooked fritters onto a plate layered with paper towels. Allow them to drain, then toss in powdered sugar to coat thoroughly. Serve hot.
Recipe Notes:
Be careful not to cook too quickly, as the outside will get dark before the middle is finished cooking.
For best results, keep the fritters on the smaller side so they cook thoroughly and evenly.
